Bhari Simla Mirch

  • 4 large capsicums
  • 1 tbsp oil
  • ¾ tsp ajwain
  • 1 onion chopped
  • - green chilies to taste chopped
  • 350 gms cottage cheese crumbled
  • ½ tsp garam masala
  • - salt and pepper to taste
  • 2 tomatoes chopped

Slice the capsicum in halves length wise making two cups. Heat oil for 2 minutes. Add cottage cheese and tomatoes, mix and cook 2 minutes. stand 3 minutes. Add salt pepper and garam masala.

Pile the cottage cheese mixture into the capsicums. Micro high when ready to serve (3 minutes).

You can use any other filling like keema, potatoes etc.

Chinese Fried Rice

  • 250 grams short grain rice
  • 450 ml water
  • 6 mushrooms
  • 1 tsp salt
  • 1 tsp garam masala
  • 1 cup finely cut cabbage
  • ½ cup finely cut beans
  • 4 tbsp oil sesame
  • 1 tsp finely grated ginger
  • 1 tsp crushed garlic
  • 2 egg beaten
  • ½ cup chopped spring onions
  • 2 tbsp soya sauce
  • 2 tbsp water

If possible, cook rice the day before, otherwise soak rice in 400 ml of water for 1 hour. Micro medium 10 minutes. When ready spread one tray to cool. All grains must be separated. Steam mushrooms for 1 minute. Cut the stems and discard. Finely chop the mushrooms.

Heat the oil and put salt and garam masala - add ginger and garlic and micro high 1 minute. Add mushrooms beans, cabbage, and mix. Add rice, mix well, stir in spring onions, and 2 tbsps water. Micro high 2 minutes. Mix soya sauce. Take beaten egg and spoon it into rice - moving rice with a fork - serve hot.

Momos

  • 1 cup crushed macaroni
  • 1 cup water- boiling
  • ¾ cup nutrella
  • 2 tbsp soya sauce
  • ½ tsp red chilies
  • ½ cup veg chopped and chilies-optional

Soak macaroni and nutrella in boiling water. Mix Soya sauce, salt, veg, chilies. Mix well. Keep aside.

  • 6 heaped tbsp maida
  • 2 tbsp oil
  • ½ tbsp salt
  • - some water

Make dough. Make 1 small ball at one time about ½ inch in size. Spread it with rolling pin (belan) till it is thin like a small roti. Put 2 tsp of filling in middle. Seal it putting some water on the sides of the rounded side of roti. Steam in micro wonder. Micro high for 4 minutes.

Deep fry in sesame oil (til ka tel) till golden brown. Serve hot. Make 15 momos.
